Egg Bhurji

Egg Bhurji
When I was a kid,omlette was one of my several favourite things in life.Steaming rice, dal and omelette used to be our food before leaving home for school, where we would be staying for the next 8 hours.The very thought now appears to be scary eventhough we usually spent more than 10 dreadful hours in the office.Rolling back the years, it was all so light and fun and even things like a Cadbury chocolate or  travelling from the bus stop to home in a rickshaw instead of foot or heading off to the para r math for a round of cricket with friends used to make us happy. Even piddly jokes used to make us laugh our hearts out.The real tension lay in the exams and books, but back then little did we know that the life beyond school days is one that is tougher that bogs us down at times.

It so happened one day, sometime back, the wife was preparing Water Poached Eggs.But due to the lack of moisture the poach didnot turn out good.She had decided since the poached egg could not be consumed, so it is better to shove it to the dust bin.It was then that I ventured into the kitchen due to some other reason where I came to know of the poor egg being shoved away.That was when, the old school recipe came to life.I took another egg,some onions and cut green chillies and used this egg too and fried all the 3 ingredients in oil and shredded the fried eggs.Added in a pinch of salt and we were done.The little fried and little raw onion slices were a treat with  shredded eggs. It was a nice accompaniment for the musur dal we had that for dinner.

Ingredients for the recipe:

  • Beaten eggs - 2
  • Onion - 1 medium sized. Cut into small pieces
  • Green Chilli - 1.Cut iunto small bits
  • A pinch of crushed ginger
  • A Pinch of Turmeric powder
  • Salt - To taste
  • Vegetable oil - 1.5 tbsp

Steps:

  • Mix the beaten eggs, cut onion slices, green chilli ,salt  and turmeric powder and keep aside.
  • Heat the vegetable oil in a pan.
  • Add the beaten eggs mixture to the pan, once the oil gets nice and hot.
  • Add some amount of salt to taste and stir fry the mixture until the egg is properly done.
