It so happened one day, sometime back, the wife was preparing Water Poached Eggs.But due to the lack of moisture the poach didnot turn out good.She had decided since the poached egg could not be consumed, so it is better to shove it to the dust bin.It was then that I ventured into the kitchen due to some other reason where I came to know of the poor egg being shoved away.That was when, the old school recipe came to life.I took another egg,some onions and cut green chillies and used this egg too and fried all the 3 ingredients in oil and shredded the fried eggs.Added in a pinch of salt and we were done.The little fried and little raw onion slices were a treat with shredded eggs. It was a nice accompaniment for the musur dal we had that for dinner.
Ingredients for the recipe:
- Beaten eggs - 2
- Onion - 1 medium sized. Cut into small pieces
- Green Chilli - 1.Cut iunto small bits
- A pinch of crushed ginger
- A Pinch of Turmeric powder
- Salt - To taste
- Vegetable oil - 1.5 tbsp
Steps:
- Mix the beaten eggs, cut onion slices, green chilli ,salt and turmeric powder and keep aside.
- Heat the vegetable oil in a pan.
- Add the beaten eggs mixture to the pan, once the oil gets nice and hot.
- Add some amount of salt to taste and stir fry the mixture until the egg is properly done.
