I had a real bad headache for the seemingly endless office work which has been pouring on me for quite sometime now.Lately I have been forced to reach office an hour earlier and leave a minimum couple of hours later.But with the Pujos being lesser than a month away and a trip back home pending it was okayish to bear the office brunt.
So, this was on another typically bad day that my aunty suggested me a new Paneer menu which she had experimented- which I was sure I won't be getting time to prepare on week days.But when she told me the method, and the ease in its preparation I was charged enough to go for it. From the morning bazaar I bought around 200 gms of excellent quality paneer(cottage cheese) and a little amount of cashew - 25 gms.Left for the office and returned back around 10-ish and prepared this recipe in 25 mins.

Preparation Time: 10-12 mins
Cooking Time:15-18 mins
Ingredients:
- Paneer - 200 gms.Cut into small cubes
- Onion: 1 medium sized(50 gms).Sliced longitudinally
- Poppy Seed: 3 tbsp. Made into a fine paste(in the mixer grinder).
- Cashew Nut: 25gms.Made into a fine paste.
- Mustard Seed: 2 tbsp. Made into a fine paste.
- Butter: 20 gms
- Green Chillies - 2.Slit. For garnishing.
- Vegetable Oil: 1 tbsp
- Sugar: 1/2 tsp
- Salt: To each, his own!
Procedure:
- In a pressure cooker, heat the vegetable oil.
- Wait for the oil to get hot.
- Then adjust the flame to medium.Addd the sliced onion and sugar.
- Stir for 2-4 mins, at the end of which the onion slices will turn reddish brown.
- Then add the paneer and stir for a min.
- Now comes the time to add the following pastes: Poppy Seed Paste,Mustard Seed paste and Cashew nut paste.
- Sprinkle salt on the mixture and continue to stir for a couple of mins.
- Melt 20 gms of butter and add the same at the last.
- Seal the pressure cooker cover.
- Adjust the oven to low/sim.
- Let the paneer cook under pressure for 5 mins at the end of which it should be done.
- Open the pressure cooker lid and remove the paneer.
- Garnish with green chillies.
Serve with Rotis.
